Cava is a sparkling wine made by the traditional method (just like champagne) in Spain from the Macabeo, Xarel-lo and Parellada grape varieties.

In the world there are several methods of producing sparkling wine:
• traditional method (also called the "champenoise method")
• transfer method
• in stainless steel tanks (also called "charmat method"; this is how prosecco is made)
• by carbonation (carbon dioxide is added)
• Asti method (used to produce sweet sparkling wines in the Asti-Piedmont region, Italy).

From all, the well-known and most appreciated method by which sparkling wine is made remains the traditional method, with the second fermentation in the bottle, which is how the famous champagne is also made in France. To make champagne the grapes (from Chardonnay, Pinot Noir and/or Pinot Meunier varieties) must come from the Champagne region of France; all other sparkling wines made in any other region of the world, using these or other grape varieties, by the same method, can only bear the generic name of "sparkling wine" or a certified name in the respective country.

This is how we have, for example, the name "Methode Cap Classique" in South Africa and "Cava" in Spain, even if we are talking about the same method of making sparkling wine, the traditional method.

Today we are talking about Cava, the sparkling wine made by traditional method in certain regions of Spain.

According to the legislation, grapes from the local varieties Macabeo (also called Macabeu or Viura), Xarel-lo and Parellada are used here for white sparkling wines and Garnacha or Monastrell varieties for rosé sparkling wines. Most of the vineyards where these varieties are grown for the production of Cava are concentrated in several regions of Spain, most of the vineyards being planted in Catalonia, but there are also certain areas specifically determined for the production of Cava in Rioja, Navarra and Valencia. For a short time now, the addition of Chardonnay and Pinot Noir varieties has been allowed in the making of Cava, they add fruitty notes and more acidity, but most producers do not use them, they think that the uniqueness element of Cava is lost if these varieties are also used.

Most sparkling "cavas" spend a minimum of 9 months on the yeast, they are dry, with medium acidity and are characterized by aromas of pastry and toast, but these may differ from the aromas of toast that we find in champagne.
