Sparkling wine from the mountains, Trento DOC - Italy
Sparkling wines from the Trento region of Italy are known as Trento DOC and are one of the most refined choices for sparkling wine lovers. These wines are obtained by traditional method, with a second fermentation in the bottle, similar to that used to produce champagne.
The Trento region, located in northeastern Italy, offers excellent climatic conditions for the production of quality wines. The rich and varied soil, combined with the mountainous influence of the Alps, gives the grapes unique and complex aromas.
In Trentino winemaking has a centuries-old tradition, but the production of sparkling wine is quite recent and is the result of the oenologist Giulio Ferrari.
In the second half of the 19th century, Ferrari traveled to the main French wine regions where champagne was produced. The Italian winemaker noticed that the French terroir was similar to that of Trentino. In short, even in Italy, in the Trento area, there were ideal conditions for creating top quality sparkling wines. This intuition was successful.
From the beginning of the 20th century, Ferrari began to produce sparkling wines using the classical method, followed by other local producers who recognized the great opportunities offered by their territory and from here began the long road that led to the perfection of production techniques and, then, upon recognition of the D.O.C.
July 9th 1993 is a historic date Italian sparkling wine lovers cannot forget - D.O.C. Trento was the first Italian appellation to be assigned exclusively to a classical method (or Méthode Champenoise) sparkling wine.
Grape varieties used in the production of sparkling wines from Trento include Chardonnay, Pinot Noir, Pinot Bianco and Pinot Meunier. These varieties combine harmoniously to create elegant sparkling wines with good acidity, freshness and vitality, making them extremely pleasant and recognizable thanks to their typical aroma, which varies from notes of fruit, peach and golden apple in the white version with added red fruit aromas in the "rosé" variant, to spices and yeast notes, hazelnuts, toast or bread crust, very clear in the "riserva" wines, resulting from the more or less prolonged contact of the sparkling wine with the yeasts.
In 2022, over 13 million bottles of sparkling Trento DOC were sold, a large number for a relatively small territory (10,320 ha) - it occupies approx. 2% of Italy's vineyard area. There are 66 sparkling wine producers in the region that add up to 220 labels.

Cesarini Sforza – The noblest of choices
By inheriting an ancient heritage, in 1974 Lamberto Cesarini Sforza founded, together with a small group of friends, the winery of the same name, with the aim of producing high-quality sparkling wines that could establish themselves not only among the producers of Trentino, but also on the national and international stage.
In just a few years, Lamberto Cesarini Sforza was able to select a good number of excellent Chardonnay and Pinot Noir vineyards, personally overseeing their management, grape selection and the development of winemaking systems. The foundations were thus laid for the birth of Cesarini Sforza sparkling wines, which in a short time managed to conquer a prominent place in the world of Trentino and Italian sparkling wines: in 1976, the first Cesarini Sforza sparkling wine was born, elaborated according to the Classic Method; in 1985 a bold Classic Method Rosé was produced from Pinot Noir grapes grown on the hills of the Cembra Valley and later, thanks to continuous viticultural and oenological research, in 1986 the first Riserva Aquila Reale was created using only Chardonnay grapes grown at altitudes above 500 m.
Cesarini Sforza sparkling wines are produced with grapes grown mainly in Val di Cembra at an altitude between 300 and 600 m above sea level.
The landscape is dominated by vineyards supported by large terraces bounded by stone walls (muretti a secco), which in total stretch over 700 km, and are cultivated mainly with Trentino pergola and partly with guyot.
The vineyards are constantly caressed by the Ora del Garda breeze, enjoy optimal exposure to the sun and are favorably affected by notable temperature differences that ensure the grapes have a perfectly balanced acidity. The effects of porphyry soils translate into sparkling wines of extraordinary freshness, minerality, power and elegance.
These are the premises of excellence that make Val di Cembra very suitable for the cultivation of varieties for sparkling wine bases, primarily Chardonnay and Pinot Noir. The variety of soils, altitude, microclimate and cultivation systems combined with a precise oenological technique, allow to obtain a unique aromatic profile.
